I have been cooking up a storm this holiday season, really yummy stuff if I do say so myself. Today because I am a little tired, I am going to share a dessert recipe for flourless chocolate cake that is sooo good and so simple. My family loves it. Because there are so few ingredients, I put “really good” behind some of the key ingredients. Trust me, use the best, it will make a difference.
1 stick butter, “really good” butter
2 ozs. “really good” baking chocolate
1 cup of sugar
1/2 teaspoon vanilla “really good”
1/4 cup potato starch
Melt the butter and chocolate together. Lightly beat the eggs and add the sugar and eggs to the chocolate and butter. Blend together and add the vanilla and potato starch. Make sure to get the crush the potato starch “bumps”. Don’t overbeat or stir.
Bake at 325 degrees for 30-40 minutes depending on your oven, don’t overcook, make sure it is still moist, watch the edge.
Serve with whipped cream (not too sweet)
I use a round baking pan. If you make two cakes you can make a layer cake with the whipped cream between the two layers.
